I have to decide between the Dolphins D against Minnesota and the Bears v Dallas. I'm leaning Dolphins, but it's kind of like choosing which foot to shoot.... Any advice?

If you can, drop one of them and play play the Browns against KC (or another defense that plays a terrible offense).
If you're going to go with one of these, I'd say play Dolphins vs. Vikings. Farve is turnover prone (except last year) and he is on a bad ankle.
Of the two, Dolphins definitely
NO def is not that strong, but they did a pretty good job againt MIN. maybe 1.5 weeks has allowed the Vikes to shake off the rust, but its worth a gamble to see if their poor offensive showing may be a trend
Of the two games, according to DAVE, the Bears have the slightly better defense than Miami and the Cowboys the slightly less good offense than Minnesota. However, the Cowboys O-line was hurting last week but Colombo and Kosier are back so Barron, the holding machine, returns to the bench, so Peppers might be better contained and Romo and the run game will be effective than against Washington. So the games are pretty evenly matched as far as the defensive matchups are concerned.
On the other hand, the Bears special teams are better than Dallas or Miami or Minnesota, so the chance for return yardage TD in their favor is better and at the very least, the return team won't put the defense in a bad position as often.
I'd lean towards Chicago.
Miami was the correct answer.
I went with the Dolphins. Thanks everyone!
