I have as my running backs Pierre Thomas, Cedric Benson, Matt Forte, and Julius Jones.
My receivers are Randy Moss, Mario Manningham, Devery Henderson, Nate Burleson, and Lee Evans. (and Anthony Gonzalez)
Start 2 running backs, 3 receivers.
I know I have to turn some of my running back depth into another receiver, but I'm not sure which running back I should be most willing to part with.

I don't see how it's a matter of being "more" willing to part with one of those guys over the others - none of them are MJD or AP. If someone was still willing to treat Forte as a first-round pick in a trade, you could even trade him.
In short, if you can get Wayne for Jones, I say go for it.
No and yes
Given how Forte's played, Thomas missing the first two and a half games to injury, and Benson and Julius being Benson and Julius, I don't think you "have to" trade one for a WR. But yes, absolutely trade Jones for Wayne if you can.

I think selling high on Julius Jones is a great deal. Granted if you can get Reggie Wayne for Benson, you'd get an even better deal. But that's probably unlikely, and Wayne is a much better receiver than Jones is a running back.
