Is there a way to only view Kubiak's matchup rankings for a single week? I want to use this data to help me decide who to stream at defense and at QB with Manning out for now.

No.
You could use the DVOA information posted today to find some good DEF matchups for week 1.
I would grab the next best QB available per KUBIAK and start him for the time being. I think ESPN did a study about trying to stream QBs and more often then not, you'll get it wrong.
