Who would you start, Matt Schaub at Arizona or Big Ben at Detroit? Both are good options but I'm not sure which one to pick.

Schaub. I'd expect the Steelers to get up early and start handing off a lot. The beauty of Schaub's situation is that Houston's hopeless defense gives every game shootout potential. I think.
Does that mean you'd start Warner vs. Houston rather than Garrard vs. Seattle (and coming off a hot week)?
I would start Ben over Schaub because a couple long td bombs against detroit will inflate his stats nicely.
I believe in Garrard, but Warner is a no brainer. Seattle hasn't got the run D or the high powered offense that might force him to throw a lot. I'd expect to see a lot more of MJD. Warner, who is probably a better QB and definitely has better weapons with a weaker run game and defense, would be throwing like mad anyway, and having to stay ahead of Houston's offense would only encourage that.
A couple of long TD bombs would indeed pad Ben's stats nicely, but if he then spends the second half handing off to Rashard, it limits him. Houston-Arizona is two top offenses versus two weak defenses--could turn into a points race.
That's my logic, anyway.
