I'm in complete agreement with Aaron about Brandon Spikes, I think he'll be a grinder of a TED and a superb complement to the more mobile Mayo. However, I don't get the comparison to Mills or Thomas, Bruschi is much more apt.
I disagree that Welker's game isn't based on his ability to cut. While he does use his body position well, his size means that if he isn't getting separation he's going to get killed as he won't have time to avoid the hits over the middle. Seriously, when does Welker ever run a route without those sharp cuts that leave nicklebacks and linebackers clutching at air? His game is based on quickness as well as smarts. I wouldn't worry if I was a Pats fan though, Edelman will produce at avery similar level and Holt ain't done yet, they'll be fine.
